Cucumber and Avocado Beauty Dip with Crudites
Taken from our book How to Cook in High Heels, this is perfect if you’re on our Beach Body Challenge with Bootcamp Pilates, but also makes a great everyday snack or light lunch. Packed full of good stuff – avocados contain monounsaturated fat, which has a positive effect on cholesterol levels and is an all round super food.
Serves 2–3
1 ripe avocado, peeled and halved
1/3 of a cucumber, peeled and grated
2 heaped tablespoons low-fat bio
yoghurt
juice of 1/2 lemon
cayenne pepper, to taste
To make the dip, place the avocado in a bowl and mash well, then add the grated cucumber. Add the rest of the ingredients and mix together well. Transfer the dip to a serving bowl and serve with an assortment of chopped crudités such as sliced red pepper, carrot sticks, or steamed asparagus or broccoli.
