Tasty beetroot dip
We are hooked on beetroot dip at the moment so we thought we would share the recipe with you!
The dip is great with vegetables or warm wholemeal pitta slices and the greek yoghurt helps to cut the sweetness of the beetroots.
450g beetroots, roasted
½ cup walnuts, chopped
2 tbs greek yoghurt
1 tsp balsamic vinegar
1 tbs dill, chopped
Salt & pepper
- Process all ingredients in a food processor until smooth.
- Top with a small drizzle of extra virgin olive oil.
