Two winter soup recipes

After the chilly weather this week, all we wanted was a bowl of hot, healthy soup. Here’s two recipes that we love:

 

Chicken Soup

  • 1 Squash, peeled and diced
  • 3 tbsp pumpkin oil
  • 500g chicken breast
  • 1 onion diced
  • 2 knobs of ginger sliced
  • 2 carrots diced
  • 1 leek diced
  • 700ml vegetable stock
  • 1/2 bunch of coriander, chopped
  • 150g creme fraiche

Drizzle the squash with oil, season and roast at 180 degrees for 40 minutes. Fry the chicken until cooked through. Dice and set aside. Fry the onion, ginger, carrot and leek until soft. Add the squash and stock, bring to the boil and simmer for 20 mins. Beat with a hand blender. Add chicken, simmer for 10 mins. Garnish with coriander and creme fraiche.

This gorgeous soup is full of vitamin A, B and E which is great for your hair and skin.

 

Beetroot Veggie Soup

  • 1 onion diced
  • 3 carrots diced
  • 400g beetroot diced
  • 1 tbsp olive oil
  • 1 bay leaf
  • small bunch of thyme
  • 1 litre of vegetable stock
  • 400g white cabbage, chopped
  • handful of chopped parsley to garnish

Fry the onion, carrot and beetroot in the oil until the onions are transparent, then season and add the bay leaf, thyme and vegetable stock. Bring to the boil and simmer for 30 mins. Stir in the cabbage and garnish with parsley.
