Three steps to healthier salad lunch boxes
Work in threes
Make three packed lunches at the same time. Fill three lunch boxes with thoroughly dry mixed leaves and then layer over with your favourite vegetables or fruit such as carrots, cucumber, cherry tomatoes, pepper, broccoli, chickpeas, beetroot, grapes or blueberries.
Top with whole-grains and/or protein
- Add some cold brown rice, pasta, chicken, hard-boiled eggs, smoked mackerel to the lunch boxes. Seal your boxes and add to the fridge.
Then get wet
- The morning of the day you‚Äö√†√∂¬¨¬¢‚Äö√Ñ√∂‚àö√°¬¨®‚Äö√Ñ√∂‚àö√´¬¨¬¢re going to eat your salad, add any nuts or watery ingredients such as cut fruit or avocado.‚Äö√†√∂‚àö√°
- Take some dressing in a separate small plastic container and add before eating.
